Delicious Pasta for You

Spicy Sauce Bucatini

Bucatini are like slightly bigger diameter spaghetti with a hole in the middle.

LIST OF INGREDIENTS

  • 14 OZ. of bucatini
  • 9 OZ. of eggplant
  • 5.5 OZ. of white onion
  • 4 tomatoes
  • Fresh chili pepper
  • Anchovy fillets in oil
  • Capers
  • Basil
  • 2 cloves garlic
  • Extra virgin olive oil
  • Salt
  • Pepper

METHOD

Quarter the eggplant and fry the pieces in plenty of hot oil; add salt and set aside. 

Peel, seed, and roughly chop the tomatoes to create a concassé.

Slice the onion and sauté in a large pan along with a drizzle of oil, 2 garlic cloves, 3 minced anchovy fillets, the whole chili pepper, and 1 tablespoon of capers.

Allow everything to simmer with a small ladleful of pasta cooking water.

Add salt and pepper to taste, then add the tomato concassé and immediately add the fried eggplant and torn basil. Quickly toss everything and serve.

Take a Walk Through “202021: A New Constellation”

The public art exhibition curated by Tereneh Idia features the work of 11 artists of color, found in nine locations throughout the Cultural District.

At 707 Penn Ave., right next to the StarloftPgh, guests can check the time — through rap lyrics. Steven Montinar’s installation, “Flava Flav’s Digital Clock,” uses 142 distinct lyrics in which capitalized letters spell out the time of day.

EVER EATEN A KUMQUAT?

These tiny citruses (yes, that’s the correct way to make a citrus plural) and super fun to eat. There’s NO WORK. Just pop and chew. The seeds are small enough to not worry about and the skin is impossible to peel. Ok, probably not IMPOSSIBLE, but definitely not worth the effort and plus – the skin is very flavorful.
These are some of my favorite citrus because eating them is is full of contradictions. Don’t peel the citrus and eat the skin? Yep. Subtly sweet yet powerfully sour? Yep. So sour that you won’t eat it again, yet they call you for another… Exactly that.
Kinda reminds me of 2020. Was it fast or was it slow? Impossible contradiction to solve. But similar to a kumquat – it was both.

Kumquats are a group of small fruit-bearing trees in the flowering plant family Rutaceae. They were previously classified as forming the now-historical genus Fortunella, or placed within Citrus sensu lato. The edible fruit closely resembles the orange in color and shape but is much smaller, being approximately the size of a large olive. Kumquat is a fairly cold-hardy citrus.

A kumquat isn’t much bigger than a grape, yet this bite-sized fruit fills your mouth with a big burst of sweet-tart citrus flavor.

In Chinese, kumquat means “golden orange.”

They were originally grown in China. Now they’re also grown in several other countries, including warmer areas of the United States, such as Florida and California.

In contrast with other citrus fruits, the peel of the kumquat is sweet and edible, while the juicy flesh is tart.

Intermission is over at the Cultural Trust

The Pittsburgh Cultural Trust has raised the curtain on its fall 2021 Broadway series and announced a seven-show series beginning in September that includes two of the most hyped shows in the country: “Hadestown” and “Hamilton,” as well as comfortable favorites like “Oklahoma!” and “To Kill A Mockingbird.”
