The Grilling Season is here. Try this excellent Recipe.We borrow the following sauce from the cuisine of Argentina. Make this easy, but very tasty sauce for meats, particularly beef and lamb.
2 garlic cloves1 large bunch parsley, leaves and tender stems ( about 3 loosely packed cups)
1 teaspoon paprika, preferably Spanish smoked paprika, hot or bittersweet
1/2 teaspoon freshly ground black pepper
1 tablespoon dried oregano
1/2 teaspoon sea salt or kosher salt
1/2 teaspoon onion powder
1/4 cup red-wine vinegar1
2 cup extra-virgin olive oil
*Place garlic in food processor and pulse until finely chopped. Add parsley and next five dry ingredients and pulse again again until finely chopped. Place mixture in a bowl; stir in oil and vinegar. (If food processor is not available, just chopped ingredients with a knife)*Taste and add salt as desired.
Use a little of this as a topping, really goes great with grilled short ribs, or grilled lamb chops
