LIST OF INGREDIENTS

• 1 lobster
• 9 OZ. of dried cannellini beans
• 7 OZ. of any short pasta
• 7 OZ. of squash, cubed
• Garlic
• Rosemary
• Thyme
• Sage
• Extravirgin olive oil
• Salt

Soak the beans for at least 8 hours, then strain them and sauté in a saucepan with 2 tablespoons of oil, a clove of garlic, and a sprig of rosemary for 2-3 minutes. Cover with cold water, bring to a boil, and cook for 50 minutes. Boil the lobster in unsalted water for 3-5 minutes, strain it and cool under running water.

Then remove its shell, also removing the meat from the claws. Sauté the squash in a saucepan with oil, garlic and a few sprigs of thyme for 2-3 minutes, then add half of the beans with 1 quart of water and cook over low heat for 30-40 minutes. Add salt and then blend everything into a cream. Heat 3 tablespoons of oil with a clove of garlic and a handful of sage leaves to flavor it well.

Strain the flavored oil into the cream, setting the sage leaves aside. Blend everything together quickly, and add the rest of the cannellini beans. Keep warm. Cook the pasta in salted boiling water. Strain the pasta, add it to the cream, and distribute the pasta into dishes. Finish the dish with the lobster meat and the sage leaves from the oil. Serve immediately.

Despite the name, Caprese Salad it is not part of the culinary tradition on the island of Capri, though it is made up of four ingredients that represent what is best in Campania – tomato, mozzarella, basil and olive oil. It made one of its first appearances on a 1920s menu for a Futurist dinner at the Hotel Quisisana in Capri.

Ingredients

5 ripe and firm tomatoes 
2 buffalo mozzarellas
basil
extra-virgin olive oil
salt

Method

Cut the tomatoes into 1 cm slices, salt them and leave the excess water to drain off for a few minutes. 

Cut the mozzarellas into 1 cm slices too.

Alternate the tomato and mozzarella slices on the plates and dress with a drizzle of extra virgin olive oil and a few basil leaves. Serve cold.

The Grilling Season is here.  Try this excellent Recipe.We borrow the following sauce from the cuisine of Argentina.  Make this easy, but very tasty sauce for meats, particularly beef and lamb.

2 garlic cloves1 large bunch parsley, leaves and tender stems ( about 3 loosely packed cups)

1 teaspoon paprika, preferably Spanish smoked paprika, hot or bittersweet

1/2 teaspoon freshly ground black pepper

1 tablespoon dried oregano

1/2 teaspoon sea salt or kosher salt

1/2 teaspoon onion powder

1/4 cup red-wine vinegar1

2 cup extra-virgin olive oil 

*Place garlic in food processor and pulse until finely chopped.  Add parsley and next five dry ingredients and pulse again again until finely chopped.  Place mixture in a bowl; stir in oil and vinegar. (If food processor is not available, just chopped ingredients with a knife)*Taste and add salt as desired.  

Use a little of this as a topping,  really goes great with grilled short ribs, or grilled lamb chops
